PERFECT CHOCOLATE MUFFIN


Hi again all.. I'm here again to post my new cake.  I left baking for about two months since my cholesterol rise and I was worried so much.  An uncontrollable worry that I hate to see my oven for some time.  For the sake of my little girl who begged me for a chocolate cake then I made this, a chocolate muffin. I choose muffin because it's the simplest cake to make.  I was so lucky to find this blog for it has a perfect chocolate muffin recipe. I copied the recipe here:


they had a deep chocolate flavor

Yields: 12 muffins
INGREDIENTS:
2/3 cup Dutch-process cocoa, I used Van Houten 
1 3/4 cups All-Purpose Flour
1 1/4 cups light brown sugar, I used white sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon espresso powder, optional
3/4 teaspoon salt
1 cup chocolate chips
2 eggs
1 cup (8 ounces) milk
2 teaspoons vanilla
2 teaspoons vinegar, i left off this
1/2 cup (1 stick) butter, melted
coarse pearl sugar, for topping (optional) (I omitted this)

DIRECTIONS:
Preheat the oven to 400°F.  Line a standard muffin pan with paper or silicone muffin cups, and grease the cups.
In a large mixing bowl, whisk together the cocoa, flour, sugar, baking powder, baking soda, espresso powder, salt, and chocolate chips. (I put the chocolate chips in last after the rest of the batter was finished). Set aside.
In a large measuring cup or medium-sized mixing bowl, whisk together the eggs, milk, vanilla and vinegar. Add the wet ingredients, along with the melted butter, to the dry ingredients, stirring to blend; there’s no need to beat these muffins, just make sure everything is well-combined. (I still had some little bumps in mine. I then stirred in the chocolate chips).
Scoop the batter into the prepared muffin tin; the cups will be heaped with batter, and the muffin will bake into a “mushroom” shape. Sprinkle with pearl sugar, if desired. (I left out the pearl sugar)
Bake the muffins for 20 to 25 minutes, or until a cake tester inserted in the center of a muffin comes out clean. Remove the muffins from the oven, and after 5 minutes remove them from the pan, allowing them to cool for about 15 minutes on a rack before peeling off the muffin papers or silicone cups.


I've made them twice, and they turned out perfect. Good luck all!

STEAMED RAINBOW CAKE

It's again a rainbow cake edition.  Only it's the simpler one to make.
Let get started!


Here's the recipe:
4 eggs
150 grams granulated sugar
140 grams all purpose flour
140 grams vegetable oil
food colorings (red, orange, yellow, green, blue, purple)

Directions:
1. Mix the eggs and the sugar until smooth and fluppy.
2. Add flour, mix the batter
3. Add vegetable oil, stir well.
4. Divide the batter into 6 equal portions, each in a separate bowl.
5. Add four drops of food coloring into each bowl of mixture. Mix them well.
6. Steam the batter, layer by layer. I poured purple batter in the first layer, wait for about three minutes then pour the next color.  Do the same for the rest.
7. After all done, remove the cake from the pan. You may cover it with icing, I didn't!

That's all. So this is it my very simple rainbow cake.

SWEET PURPLE POTATO CAKE/ CAKE UBI UNGU

I baked this cake since I had a basket of sweet purple potatoes stock.  Sweet purple potato barely has no flavor and you got to use it as 'extra ingredient' in your cake recipes. So far I've used some of my stock for donuts and kolak biki salak.




The addition of sweet purple potato makes the cake super moist and more beautiful color.


Ingredients:
200 grams mashed sweet purple potato
4 eggs
3/4 cup granulated sugar
1 cup all purpose flour
120 ml vegetable oil
rice chocolate for topping as needed (it's okay if you substitute rice chocolate with butter cream or any other toppings)

Directions:
1. preheat oven
2. grease a loaf pan and dust with flour
3. In a large bowl, mix together the eggs and sugar until light and fluppy
2. Add mashed sweet purple potato, stir well.
3. Gradually add sifted flour, stir well.
4. Add vegetable oil, stir until the mixture is well blended.
5. Pour the batter into the pan, then bake for about 20 minutes or more (check by inserting a cake tester into the center of the cake, if it comes clean then it's done).
6. Remove the cake from the pan, allow it to cool.
7. Give it a topping with anything you wish.

DEVIL'S FOOD CUPCAKES

Cupcakes always look wonderful no matter what on the top; chocolate,stawberries,sprinkles,fondant,or even only a buttercream itself.  The other best part of cupcakes is that you can make them from any kinds of cake recipes. Like i did on my very first cupcakes trial (as well as the second and the third). Since i am a chocoholic then i decided to use devil’s food cake recipe. It’s soooooo chocolate!!! I love chocolate cake that tasted bitter. So to me this devil’s food recipe is the perfect choice. I frosted the top with chocolate buttercream then a chocoball to make it perfect.

These cupcakes i made for my nieces out of town. As soon as i arrived there, they immediately grabbed all the cupcakes. Happy me!! They said the cupcakes were great and beautiful. Thanks, kids :)

RAINBOW CAKE :D


Saffa maksa dibikinin rainbow cake, tapi cuma punya 4 pewarna ini di rumah. Yo wis jalan saja.. Ini pake resep Spongecake 8 telur milik Bu Fatmah. Kalo saya 1 resep dibagi 2, dikasi 2 warna. Jadi satu buah cake ini, saya mengocok dua kali (2 kali resep). Atasnya pake butter cream plus taburan keju. Saffa seneng banget walaupun pelanginya kurang 3 warna,hehehe..


Sponge cake 8 telur :
source : NCC
8 btr telur (ukuran sedang – jangan masuk ke kulkas…)
200 gr tepung terigu segitiga biru
100 gr mentega cair (ditim diatas air mendidih)
200 gr gula pasir
1 sdm emulsifier (misalnya : sp)
1/4 sth vanilie

cara membuat :
1. Panaskan oven
2. Kocok telur + gula + emulsifier sampai mengembang
3. Campur vanilie ke dalam tepung terigu
4. Masukan tepung terigu sedikit demi sedikit sambil diayak…jangan lupa ngaduknya cara aduk putar balik…
5.Masukan mentega cair sedikit demi sedikit sambil diaduk sampai habis.aduk balik lagi

6. Bagi adonan menjadi 2 bagian, beri masing-masing 2 warna berbeda.
7. Tuang adonan ke dalam loyang yg sudah dilapisi kertas dan diolesi mentega
8. Cake ditusukk pakai lidi untuk mengetahui sdh matang atau belum.

9. cake disusun satu persatu setelah diantaranya diberi olesan butter cream. Hias kue.

ROLL CAKE - Bolu Gulung Ekonomis


Aku emang gak mau bikin kue yang banyak pake telor. Selain menghemat budget,suami juga suka protes kalo kue tercium bau telornya. Makanya bolu gulung juga aku bikin seekonomis mungkin,hehehe... telornya cuma empat. Tapi jangan salah, rasanya tetep juara, tetep enak tok! Oya, warnanya rame ya bolgul aku soalnya waktu itu bikin ini buat teman2 saffa di sekolahnya. Kuenya langsung diserbu anak-anak plus ibu-ibu, alhamdulillah abis :)

Ini bolu gulung my version:
4 kuning telur
2 putih telur
100 gr gula pasir
1/2 sdt garam
70 gr terigu
10 gr susu bubuk
75 gr minyak sayur

Cara membuat:
1. Kocok telur dan gula sampai mengembang.
2. Masukkan garam, kocok lagi sampai mengental dan pucat.
3. Masukkan terigu dan susu yang sudah diayak, aduk rata.
4. Masukkan minyak, aduk rata.
5. Tuang pada loyang uk. 22x22x4 yang telah dilapisi kertas dan dioles minyak.
6. Panggang sampai matang.
7. Olesi selai (kue bag atas), gulung. Potong-potong..

BOLU COKLAT KUKUS


Dapet resep kue ini dulu dari bibi, aslinya coklaaaaat banget ampe agak-agak pait gitu. Penampilannya juga bukan begini, tapi kue potong biasa yang atasnya ditaburi banyak meses coklat. Sebenarnya lebih suka yang ala bibi itu soalnya aku suka kue coklat yang pait. Yang ini sih memberdayakan sisa selai coklat di rumah. Oya, kue ini teksturnya empuk banget,agak2 moist, apa karena dikukus kali ya..

Resep:
4 butir telur
1 gelas gula pasir
1 gelas tepung terigu
2 sdm penuh coklat bubuk
125 ml minyak sayur
1 sdm TBM

Cara membuat:
1. Campur tepung terigu dan coklat bubuk, ayak. Sisihkan
2. Kocok telur dan gula sampai tercampur rata, masukkan TBM kocok lagi sampai mengental dan pucat
3. Masukkan campuran tepung, aduk rata.
4. Masukkan minyak sayur, aduk rata sampai homogen.
5. Tuang loyang yang telah dioles margarin. Kukus sampai matang.



Setelah dingin, kue dipotong dua bagian atas bawah, dalamnya dikasi selai coklat. Satukan lagi, potong-potong. Ato boleh juga saat kue masih panas langsung ditaburi meises coklat, kemudian potong-potong.
Naaah kan..gampang banget ya?! Bikin sendiri di rumah yaa..

BANANA CAKE - Bolu Pisang


Resep bolu pisang yang satu ini udah pas banget buat aku. Aku udah sering bikin dan semuanya suka.  Waktu nikahan anak paman minggu kemarin, aku bikin 4 loyang bolpis ini. Seneng banget soalnya bolu aku abis duluan dibanding bolu-bolu lain yang udah dipesan dari toko kue. Senangnyaaaa...

Dapet resepnya dari googling tapi beneran lupa dari blog-nya siapa. Mohon ijin share resep ya buat yang punya resep ini.

Bahan-bahan:
5 buah pisang ukuran sedang (aku pake pisang apa aja, tapi bagusnya pisang ambon), lumatkan.
4 butir telur
1 gelas gula pasir
1.5 gelas tepung terigu
1/2 sdt baking soda
1/2 gelas minyak sayur

Cara membuat:
1. Ayak terigu dan baking soda. Sisihkan
2. Kocok telur dan gula sampai kental dan pucat
3. Masukkan campuran terigu dan soda kue, aduk rata
4. Masukkan pisang lumat, aduk rata
5. Masukkan minyak sayur, aduk sampai rata
6. Tuang ke dalam loyang yang telah dioles mentega dan dibedaki tepung
7. Panggang samapi matang. Tes tusuk.

Coba deh. Gak perlu jauh-jauh lagi beli bolu pisang ke sukabumi/ tasikmalaya,hehehehe...

BUTTER CAKE KURMA


Sebenernya yang kebayang-bayang butter cake yang bertabur sukade warna-warni. Jadi dulu waktu masih nge-kost, landlady saya itu orangnya baiiiiiiikk banget. Dia jago bikin kue juga ternyata. Kalo lagi bulan puasa deket2 lebaran,dapurnya wangiiiii. Saya pernah dikasi butter cake yang isinya banyak sukadenya. Warna bolunya pucat tapi begitu dimakan,empuuuukk dan manisnya pas banget. Ya ini inspirasinya dari bolu ibu kost itu,gak pernah lupa enaknya sih. Berhubung gak punya sukade dan masih banyak kurma sisa ramadan,ya wis bikin bolu dikasi potongan kurma aja. Enak juga ternyata. Takaran gulanya dikurangi biar gak terlalu manis.

Resep:

4 butit telur
200 gr mentega/margarin
180 gr gula pasir
200 gr terigu,diayak
potongan kurma kecil-kecil secukupnya, bedaki dengan tepung terigu.

Cara Membuat:
1. Mentega dan gula dikocok sampe lembut. 
2. Masukkan telur satu persatu sambil terus dikocok sampai rata. 
3. Masukkan terigu dan kurma, aduk pake spatula.
4. Tuang ke dalam loyang tulban yang sudah dioles mentega dan ditaburi tepung.
5. Panggang samapi matang. Tusuk lidi saja ya, kalo udah gak nempel berarti dah mateng :)

Potong-potong, makan hangat-hangat masih ngebul dan empuuukk. Jangan lupa teh panas juga ya :)
Jadi 18 potong.
